Baked Spiced  Pears with a Vanilla
Ice Cream Sauce

6 servings

3 ripe pears
3 Tbls of dried apricots
2 Tbls of dried cranberries
2 Tbls of dried cherries or raisans
¼ cup of chopped walnuts

Slice the pears in half (do not peel)
With a melon baller scoop out the core to
make a cavity
Place the pears in a 3” deep casserole dish

Prepare cooking liquid
2 Cups of apple cider
2 Tbls of butter
2 cinnamon sticks
grated nutmeg
¼ tsp of ground ginger
¼ tsp of ground clove
2 Tbls of brandy of your choice. Chef Ellie
used vanilla brandy.

Bring to a simmer on medium heat and then pour over
the pears.
* If the dried fruit is too hard you can soften it in the
cooking  liquid.

Mix the dried fruit together and fill the cavities of the pears.
Scatter the walnuts over the top.

Bake 30-40 minutes at 350 degrees til the pears are tender
Serve with vanilla ice cream sauce.

Vanilla  Ice Cream Sauce
Soften vanilla ice cream and wisk into vanilla whipped cream.
