Chicken and Melon Salad

6 servings
2 Packages of chicken terderloins (poached)
½ of a cantalope cubed
¼ lb of bacon chopped
4 ribs of celery chopped
½ red onion chopped
¼ cup of chopped cilantro
Salt and pepper
Cayenne pepper

¼ cup of mayo
1 cup of Greek yogurt
1 orange  (the juice and zest)
A few Tbls of Sherry vinegar, to taste
1 Tbl of champagne mustard
1 tsp of honey

Cut the poached chicken into cubes
Then add the rest of the ingredients
Season with salt and pepper and a pinch of the
Cayenne pepper.
Lightly toss with the dressing
And garnish with the chopped bacon.
