Halibut in una busta

One piece per per person 4-6  oz
Per package

Ingredients for 4 packages
4 Halibut filets about 1 ½ inch thick
Salt and Pepper
Dry white wine
Extra virgin olive oil
2 Onions
2 Fennel bulbs

Carmelize the onions and fennel with olive oil in a
Saute pan and set aside until you assemble the packets

Cherry tomatoes-yellow and red
Black pitted calamata olives
1 can of diced plum tomatoes and its juice
Chopped Italian parsley
Torn basil leaves

Method
Prepare packets
Take a large piece of foil (16 inches)
Brush the foil with olive oil
Place the fish skin side down on the foil
Season with salt and pepper
Spoon Fennel and onions over the seasoned fish
Plie on the rest of the ingredients over the fish.
Season again with salt and pepper.
Drizzel with a dry white wine and extra virgin olive oil.
Enclose the fish like a package.
Leave a slight opening on top and place on a baking sheet.
Roast at 375 degrees about 25-30 minutes until the fish is firm to touch.
Counter
