Irish Soda Bread
Mamma Hackett’s version, studded with
currants and golden raisins.

Ingredients
31/2 to 4 cups of all purpose flour
¾ cup of sugar
1 TBL of carraway seeds
1/2 cup of currants
1/2 cup of yellow raisans
1TBL of baking powder
1 tsp of salt
1 tsp of baking soda
1 ¾ cups of buttermilk well shaken
6 TBL of melted butter (divided)
2 large eggs

Method
Brush a 2 qt casserole dish with some of the melted butter
In a large bowl combine  the dry ingredients.
Starting with 3 ½ cups of flour
Add sugar,carraway seeds,baking powder,baking soda and salt.
Wisk the dry ingredients together.
In a glass measuring cup place the buttermilk and crack 2 eggs into
the buttermilk
Add 3 TBL of melted butter and wisk together with a fork.
Pour into the dry ingredients and stir together until the mixture comes to a ball.
Place the mound of dough on your work surface and sprinkle extra flour to come to a
smooth mound.
Place the mound of dough in your buttered casserole dish. Then brush the dough with
melted butter and with your hand, make a cross on the mound of dough and sprinkle with
granulated sugar.
Bake in a 350 degree oven for about 50 minutes.
