Jersey Tomato Gratin

5-6 Tomatoes
1 med to large fresh mozzarella
½ cup of Parmegiano Reggiano
½ cup of drained capers
1 cup of sliced basil leaves
Extra virgin olive oil
Salt and pepper
Flavored bread crumbs

Drizzle olive oil on the bottom of
a casserole dish
Slice tomatoes,layering with chopped
mozzarella and sprinkling with the grated
Parmegiano Reggiano.
Following with the capers and basil, salt and pepper
and drizzling wth the olive oil.
Season with salt and pepper.
Sprinkle with flavored bread crumbs
Repeat layering as above and ending with the
mozzarella and bread crumbs.
Bake for 30-35 min at 350 degrees.
