Linguine by the Sea
4 Servings

2 Lobster Tails
1 Lb of linguine
2 garlic cloves
1 cup of chopped Italian parsley
6 basil leaves
2 cups of chopped canned tomatoes
½ cup of fish stock
1 can of chopped anchovies
Extra virgin olive oil
1 Tbl of butter
½ tsp of crushed red pepper
Sea salt

Have pasta water boiling while you’re making your sauce.
Cut the lobster meat into large chunks
Brown the garlic in olive oil and add anchovies,
add the lobster meat And cook until the lobster meat
is opaque.
Meanwhile,cook the pasta to al dente
Add the tomatoes to the lobster.
Cook for 1-2 minutes
Add the fish stock. and cook for another 2 minutes.
Add parsley,basil,crushed red pepper.
Then toss with pasta and season with salt and pepper and
garnish with more of the  Italian parsley.
