Mediterranean Lentil Salad

Ingredients
1LB bag cooked dry lentils
4 Stalks of chopped celery
3 bell peppers diced (red,yellow,green)
1 can of garbonzo beans-drained
1 chopped red onion
¼ cup of chopped parsley
1 cup of green peas
½ cup of chopped carrots
White balsamic vinegar or Sherry vinegar
Anchovy paste
Olive oil
1 Orange and its rind
Pepperocini
Dijon mustard
Honey


Assembly
Combine ingredients and season with
salt and pepper

Dressing
In a bowl add 1/3 cup of vinegar
Rind of the orange and its juice
2 squezzes or about a teaspoon of anchovy paste
1tsp of honey
Wisk in a 1/3 cup of olive oil
Pour dressing over salad and adjust your seasoning
