Rigatoni with Niecy’s Sausage

(use 1LB of sweet Italian sausage)

1 Lb of rigatoni cooked al dente
1 Lb of sweet Italian sausage cut into
small pieces
1 can of San Marzano plum tomatoes
1 onion,sliced thin
1 garlic clove,sliced
Salt and pepper
Red pepper flakes to taste
2 cups of cannellini beans
Basil leaves. 4 or 5
Parmigiano Reggiano

Saute the onion in olive oil until golden brown
Add sliced garlic and continue to cook for a few
Add the sausage and brown on all sides.
Season with salt and pepper and red pepper
Add the San Marzano tomatoes and break the
Tomatoes up with a spoon.
Simmer for 8 to 10 minutes
Add the cannellini beans and simmer for a few
minutes more then add the pasta coating all the
ingredients together.
Add torn basil leaves and grated cheese.
Add some of your reserved past water if needed.
