Carmelized Onion and Apple Soup
First make your soup starter
Ingredients and method for soup starter
1 onion chopped
3 carrots chopped
3 ribs of celery chopped
Brown in olive oil in a stock pot
Then set aside
Ingredients for soup
3 cups of vegetable broth
2 cups of cold water
2 cups of apple cider
4 Large sweet onions (sliced)
2 shallots (chopped)
4 leeks (cleaned and sliced)
1 garlic clove
5 apples combination of sweet and tart
(peeled and cubed)
1 fennel bulb (chopped)
In a saute pan, carmelize the onions until golden
In olive oil and 1Tbl of butter.
Add the shallots,garlic and leeks.
Saute it all together and add to the stock pot.
Then in the same saute pan add your fennel and apples.
Cook for 5 minutes
Add the thyme leaves and season with salt and pepper.
Then add to stock pot.
Add the broth,water and apple cider.
Simmer until the apples and fennel are tender.
About 45 minutes.
Puree in blender and adjust seasoning add zest of a lemon
and some grated nutmeg.
