Penne and Arugula with
Cherry Tomatoes

Ingredients- 4 Servings
1 pint cherry tomatoes
1 Bunch of fresh Arugula- cleaned
1 Lb Penne Pasta
1 red onion
Olive Oil
Balsamic Vinegar
Salt and Pepper
1 tsp of sugar
½ cup of basil
1 clove of chopped garlic

Method
Slice the cherry tomatoes in half and
Season with salt and pepper and
coat with olive oil.
Add garlic and basil.
Allow the tomatoes to marinate for at least ½ hour at room temp.
Meanwhile have your pasta cooking.

In a saute pan, carmelize the red onions in olive oil.
Add about a ½ cup of balsamic vinegar and sugar and
cook down until the balsamic vinegar is syrupy.
Then add the cherry tomatoes and cook until the tomatoes
are cooked down.
Add crushed red pepper flakes if desired.
Pour the sauce over the cooked pasta and season with salt and pepper.
Toss in the roughly chopped arugula, over the pasta and other ingredients.

Ready to serve.
