Spinach and Roasted Pepper Strata
1 small loaf of day old semolina bread
2 cups of half and half
Salt and pepper
3 peppers, roasted and peeled
1 pre bagged spinach
1 garlic clove sliced
1 slice of pancetta,diced
1 cup of grated fontina cheese
¼ cup of grated Parmegiano Reggiano
Cut the bread into medium sized cubes
and place in a greased casserole dish. Set aside
In a saute pan lightly brown garlic and render pancetta.
Add the spinach leaves and cook just until wilted. And set aside.
Wisk the eggs till broken while wisking in the half and half.
Season with salt and pepper.
Pour the custard over the bread.
Then scatter the sauteed spinach over the bread,then add the
Peppers on top of the casserole. Sprinkle with the cheeses and place in a preheated 350 degree
oven and bake until the middle is set.
