Deep Dish Strawberry Rhubarb Pie
1- 9 inch pie
Ingredients for pie dough,enough for top and bottom
2 1/2 cups all purpose flour
1 teaspoon sugar
2 sticks cold sweet butter,cut into cubes
5 tablespoons cold water
Ingredients for filling
3 cups cubed fresh rhubarb
2 pints halved fresh strawberries
2 cups sugar
½ cup flour
1 pinch cardamon
1 zest of orange and it’s juice
Method for dough
Place the flour,sugar and salt in a mixing bowl.
Cut in the cold butter until it resembles corn meal.
Drizzle in the 5 tablespoons of cold water and work the dough into two balls.
Refrigerate until firm.
Roll one disc into the bottom of a deep dish pie plate.
Refrigerate while you roll out the other dough and make the filling.
Roll out the second ball of dough and cut into 1 inch width strips, and set aside
Method for filling
In a large mixing bowl place the rhubarb,berries,sugar ,flour,cardamon, orange zest
and the juice of the orange.
Mix everything thoroughly.
Place the mixture in the pie dish,then place the pastry strips decoratively over the filling,
Crimp the edges of the pie dough and brush the top of the pie with an egg wash and
sprinkle with a teaspoon of granulated sugar.
Place the pie on a baking sheet and place in a preheated 350 degree oven
for about and hour. Check to see if the rhubarb softens and juices are bubbling.
