Summer Couscous

Ingredients and method for couscous
2 cups of couscous
2 cups of boiling water
Place the couscous in a bowl and
Pour boiling water over and add
1 TBL of olive oil
Cover with plastic wrap and let steam.
Fluff with fork.

Ingredients to add to couscous
4 ears of corn off the cob.
Roast the corn with oilive oil and salt and pepper
for 15 minutes.
1can of garbanzo beans- drained
1 Yellow bell pepper- diced
1 Scallion sliced
1 small red onion diced
1 Package of cherry tomatoes sliced in half
Mix the ingredients into the cooked couscous.
Pour dressing over and mix thoroughly.
Season with salt and pepper

Ingredients for dressing
2 shallots chopped
A pinch of sea salt
A Bunch of mint leaves

Method for dressing
Chop the ingredients in the  food processor
Add ¼ cup of balsamic vinegar
The juice of 1 lemon and its zest.
Drizzle in olive oil
Season with salt and pepper
Pour over couscous and serve
