Summer Zucchini Salad

4-6 servings

1 Red onion medium dice
4 zucchini
2 Bell peppers 1 red 1orange, medium dice
4 ears of corn off the cob
Fresh thyme
Salt and pepper
Olive oil
Balsamic vinegar
1 tsp of sugar

Saute red onion in 2 TBls of olive oil and carmelize.
Then deglaze the pan with about ½ cup of balsamic vinegar
Cook until syrupy. Then add sugar. And set aside

Prepare Zucchini
Cut the zucchini in half then vertically slice the zucchini
Into thirds.
Keep in a stack and slice on the bias.
Put the zucchini in a bowl.
Add the bell peppers
Add the corn off the cob.
Add the thyme. Then season with salt and pepper

Then coat the vegetables with the reduced balsamic
and serve.
