|Tomato Gratin Provencal
1 Large Casserol
This dish is great for utilizing summer tomatoes and basil.
8-10 Large tomatoes
2 Logs of goat cheese
Fresh basil pesto or fresh torn basil leaves
grated parmesan cheese
Lightly oil casserole then layer tomatoes,crumbled
goat cheese and grated parmesan cheese.Then sprinkle
with chopped olives.
Repeat the layers and end with tomatoes and breadcrumbs
Bake until bubbly and brown.
Approximately 25 minutes at 350 degrees
