Zucchini Pasta with Roasted Tomatoes

4-6 Servings
1 Lb of orrichiette
1 package of cherry tomatoes sliced in half.
(and roasted with olive oil
at 350 degrees for 10-15 minutes)
1 cup of chopped fresh tomatoes
or canned tomatoes
½ cup of chopped basil leaves
½ to ¾ cup of heavy cream
1 clove of garlic
3 zucchini,thinly sliced
½ cup of grtated Parmigiano Reggiano
1 pinch of crushed red pepper
Salt and pepper
Extra virgin oilive oil.

Have pasta water boiling
And prepare the pasta as you are making
the sauce.
For the sauce, lightly brown garlic and olive oil.
Add your sliced zucchini and saute until golden brown.
Then add your roasted tomatoes and your chopped tomatoes,
Then season with salt and pepper and crushed red pepper.
Add the cream and simmer until cream is slightly thickened.
Add cheese and correct  seasoning .
Drain your pasta and add it directly to the sauce.
Coating the pasta evenly with the sauce.
